The short answer
Agar-agar is a gelling agent made from seaweed. It is a halal and vegetarian alternative to gelatin, and it raises no question about animal sources.
What is agar-agar, and where is it used?
Agar-agar is made from red algae, a type of seaweed. It sets liquids in the same way that gelatin does, but it comes entirely from plants. You will find it in desserts, jellies and some dairy products. It is also the most popular gelatin substitute in halal baking.
Why is agar-agar halal?
There is no question about animals, alcohol or slaughter, because agar-agar is seaweed. That is exactly why it is a standard halal and vegan replacement for gelatin.
Common questions
Is agar-agar halal?
Yes. It is a gelling agent made from seaweed, with no ingredients from animals.
Is agar-agar the same as gelatin?
No. It does the same job, but it comes from plants, so it avoids the animal-source problem that gelatin has.
Can I use agar instead of gelatin?
Yes. It is the most common halal substitute for gelatin, although it sets firmer.
What foods use agar-agar?
Many jellies, puddings, fruit snacks and Asian desserts use agar-agar. Gushers, for example, are made with agar-agar and other plant-based gelling agents instead of gelatin.
