The short answer
Ice cream is a per-flavour category, not a per-brand one. What can make an ice cream not halal?
The base — milk, cream, sugar — is fine. Three things vary by flavour and brand.
Alcohol in certain flavours. Rum raisin, bourbon and liqueur-based flavours contain real alcohol and are avoided by the majority. This is the single most common flag on premium ice cream.
Emulsifiers (E471) and any gelatin. Mono- and diglycerides (E471) can be plant or animal-derived; some soft-serve and novelty products also add gelatin. Uncertified brands do not disclose the source.
Add-ins. Cookie dough, marshmallow swirls, and some coloured ripples can bring their own gelatin, carmine or shellac into an otherwise-fine base.
Plant-based (dairy-free) ice creams sidestep the emulsifier-and-gelatin question and are halal by ingredient, apart from any alcohol flavour.
