The short answer

Most bread is halal — flour, water, yeast and salt are all fine. The 'depends' is three additives in some commercial breads: L-cysteine (E920), a dough conditioner that can be made from duck feathers or human hair (synthetic is halal); mono- and diglycerides (E471), which can be animal-fat-derived (including pork); and lard or animal shortening in a few recipes. Simple bread is halal

Basic bread — flour, water, yeast and salt — is halal. Sourdough, many artisan loaves and home-style breads keep to these simple ingredients and raise no halal question.

The three additives to watch in commercial bread

Mass-produced soft breads, buns and pizza dough often add a few things that need checking:

The two most common watch-outs in soft commercial bread are L-cysteine (E920) and E471 — both hide under 'dough conditioner' or an E-number, and both have animal-source possibilities. Lard is rarer but decisive where it appears (see our lard page).

How to clear it

  • Plain, artisan or sourdough bread with simple ingredients → halal.
  • A halal mark or 'suitable for vegetarians/vegans' → covers L-cysteine and E471 source.
  • Soft commercial loaves, burger buns, bagels, pizza dough → check for E920, E471 and lard.
  • Watch tortillas, biscuits and some pastries for lard / animal shortening.
